Dry Martini
Gin and dry vermouth stirred down cold and served straight up, with a lemon twist or an olive and nothing else in the way.

Method
Put a coupe or martini glass in the freezer for at least 20 minutes.
Fill a mixing glass two-thirds with ice.
Pour the vermouth over the ice, then the gin.
Stir steadily for 30 seconds. Count it rather than guessing; this is the step that sets both temperature and dilution.
The mixing glass should frost on the outside and the liquid should look slightly viscous as it moves.
Strain into the frozen glass.
For a twist, pinch the lemon peel skin-side down over the surface to spray the oil, wipe it round the rim and drop it in.
For an olive, use one good one on a stick rather than three indifferent ones, and never any brine unless a dirty martini was asked for.
