Method
Put the white rum, coffee liqueur, crème de cacao, cream of coconut and milk into a blender.
Add the ice.
Blend on high for 30-40 seconds, until completely smooth with no chips left.
Check the thickness: a straw pushed into the middle should stand up on its own. If it falls, add a handful of ice and blend again.
Pour into two tall glasses.
Float the dark rum over the top of each.
Grate nutmeg across the surface and serve at once, before it starts to slump.
