Paloma

Salt half the rim of a tall glass if you want it, running a lime wedge round the outside first.

Fill the glass with ice.

Pour in the tequila and lime juice and add the pinch of fine salt.

Stir briefly to dissolve the salt, before the soda goes in.

Top with the grapefruit soda, pouring down the side of the glass.

Give it one gentle turn with a bar spoon, lifting from the bottom rather than stirring in circles.

Tuck in the grapefruit wedge.
