Method
Put the mint leaves and the sugar syrup into a tall glass.
Press the leaves gently against the side of the glass with a muddler four or five times. They should look bruised, not shredded.
Add the lime juice and the rum.
Fill the glass two thirds with crushed ice and stir until the outside frosts.
Top with more crushed ice to just below the rim.
Add soda water to fill and stir once from the bottom.
Slap the mint sprig between your palms to wake it up and set it against the ice, next to the straw, so it sits under your nose.
Add the lime wedge and serve.
