Negroni — for Count Camillo Negroni, who asked for his americano with gin in place of the soda.
Equal parts gin, sweet vermouth and Campari, stirred over ice and served with orange — the bitter aperitivo that needs no shaking and no adjusting.

Ingredients
Method
Put a rocks glass in the freezer, or fill it with ice and water while you work.
Fill a mixing glass two-thirds with ice.
Pour in the gin, vermouth and Campari.
Stir with a bar spoon for 20-30 seconds, until the outside of the mixing glass has frosted and the mixture is noticeably heavier on the spoon.
Stop at that point. Stirring past it keeps diluting, and a negroni that has gone thin cannot be rescued by adding more of anything.
Empty the serving glass and put one large ice cube in it. One large cube melts far more slowly than several small ones, which matters in a drink you sip for twenty minutes.
Strain the negroni over the ice.
Hold the orange peel skin-side down a few centimetres above the drink and pinch it sharply, so the oil sprays over the surface.
Rub the peel around the rim and drop it in.
