
Clove

Cloves are the dried, unopened flower buds of an evergreen tree, small dark nails with a round head, and this page covers them whole and ground. Their flavour is intensely warm, sweet and numbing at the edges, strong enough that four or five perfume a whole pot, and too many turn a dish medicinal. Whole cloves go into broths and braises and come out again before serving: the Braised Red Cabbage here has you fish them out at the end, and Pho Bo toasts them dry with star anise and cinnamon until the kitchen smells warm. Ground cloves lose their scent quickly, so buy whole, keep them sealed, and grind only what you need, as the Garam Masala does.
